If I were buying in a private sale face-to-face, I would do it at an AD with a watchmaker and pay the AD to open the caseback and verify authenticity before completing the transaction.

Wishful thinking! The last time I asked an AD to allow a private sale transaction to take place on their premises they said no, and they would not verify the authenticity of any third-party watch regardless of being offered a fee. Basically, they would not take any responsibility for such a transaction. Too much risk for no reward.
