Weber really makes a nice grill. A lot like rolex. Just a solid reliable grill without the gimmicks.

All week I've been honing my skills on an 18" charcoal Weber.

A thick single briquette deep over one half, then make a pyramid. Regular fluid, get it going. 45 minutes later, spread back out over half. Add applewood, top grill, set product in foil boat on opposite side, cover with vent to off side. 30 minutes in, maybe add a little water to the boat.

Careful not to spear boat when checking product. A skinny wrist-thin pork loin takes about 55 minutes to perfection.

As for the meat, nothing more than olive oil, salt, pepper, and maybe one or two other secret ingredients chosen at random.

All pro chefs I know cook on Weber. A big statement!
