Sub is nice for anything you might need to time, not just dives. I use mine often to time just about anything that needs to be done in less than 1 hr, which is nearly all cooking I do (the BBQ is a mandatory appliance to me). If you travel to diff time zones all the time a GMT might be a better option.

The Bezel on the Sub would also help when you have parked your car in a limited timezone. When I had my Seadweller, it saved me a fortune on parking tickets :)
I have a GMT and use the 2nd timezone for travel and I have some buddies living in the far east and set the 2nd time to help me to make skype calls at agreed times.

I don't own a Sub. I do however own a Sea Dweller and a Pepsi GMT II (being serviced as we speak). The obvious answer is both. However, the more reasonable answer is the GMT II. More versatile since you can go with a black bezel and get the "Sub" look. Later on, change to a Pepsi or Coke bezel and feel like you have a brand new watch. Unless you are deep sea diving, and you actually take your Rolex beyond 330 ft (few do) the GMT will be fine for low depth water exposure. The GMT II is a little lighter on the wrist than my SD. I suspect it has a little lighter feel than the Sub as well. As always, go with the watch that calls to you. You can't go wrong with either.

I'd go with the sub. I definitely don't have as much experience as some of the other posters on this forum but the popularity of the submariner is definitely not something likely to go away anytime. Plus if someone asked me if I wanted a sub or gmt i'd go with the sub :)
