Of course, depends on your needs, but I would personally go for a sea-dweller:
I need water resistance, a date (but don't like the Cyclops) and want to bring it wherever I go (thus not too shiny). Either 16600 (now discontinued) in good condition or 116600

To reiterate : 16710.
With all the bezels it's three watches in one. And very easy to change out a different bezel, like one min after you do it a couple times.

Pretty much any Rolex can handle being your one and only. I'm a sub guy at heart, so my suggestion for a bnib piece for under 8k would be a 114060. Good luck!

i'd go gmtii. classic look and almost lets you scratch a little bit of any latent submariner itch but with a really useful (IMO) added functionality. as to 16710 vs. 116710 and different bezel options I'd just check a few out and go with what resonates.
