Hey OP, personal opinion here as always, but you are definitely over-thinking it. They are all nice. There is no wrong answer. People wear hulks daily... why because the watch is already tiny compared to the whole wardrobe... the color of the dial is insignificant relative to the rest of the attire. Buy the combo you like the most. And it wont clash with anything. Promise. My favorite is the blue sticks, fluted, jubilee. Just personal taste. It will go with just as many outfits as a black dial, or a rhodium dial. Get the combo you lust the most. Forget about what it will match with. To quote a popular saying: "Rolex matches with everything" =).

* update on the update *
So, I went to my AD, another AD, and two pre owned stockists.
Between them I was able to try Fluted Rhodium on jubilee with diamonds, Smooth Black with batons on oyster , smooth blue with batons on oyster, and off the AD managers wrist a fluted blue with batons on jubilee.
The manager could not have been more helpful, he has told me to keep my orders for the blue open and if I don’t like it it’s no issue at all and he will get me a black within a couple of weeks.
So as it stands I’m getting blue.

Great and elegant choice! You'll find that it's a very versatile colour and easy to match.

Jubilee and smooth, I know most people say oyster with smooth but I much prefer jubilee.
So on the blue, I feel the more you look at it straight on ( like if I was checking the time ) the lighter it looks which is when I like it least , but looking at someone wearing it or in the mirror wearing it myself it’s a much darker blue and I love it like that.
Black is black, it always looks good.

Stick with the blue but switch to fluted. Flute envy will get you down the road like it had for so many of us. Avoid the flip and get the fluted.

I don’t like fluted in any spec other than the yellow gold bi metal one I tried but that’s not a consideration.

Ok no problem. A blue baton Datejust II was my first Rolex purchase. I've had it 6+ years and still absolutely love it. The blue is just a perfect color. Black and rhodium are nice but they don't have the pop of the blue. I've never regretted getting the blue dial. My only regret was getting a smooth bezel so I wound up trading it +cash for the exact same watch fluted.

I agree 100% with not liking the light blue color looking head on at the dial. It's the dark blue that is just mesmerizing. I use a laptop so unfortunately, I cant help you out with posting photos.

I'm willing to bet that, no matter which one you end up with, you will be unhappy and get into

second-guessing yourself almost immediately...three threads on the same topic "which watch should I buy?"

Give it a rest.

I oscillate between the rhodium and blue dials. If I were to go blue dial i would go ruman numerals azzurro

I can't remember if you were able to compare the blue & black side by side?

I think you're on the right track with the choice between these three. I would eliminate black because of the abundance of black dial sports watches that most collections have. I don't think you can go wrong with blue vs. rhodium. Both are incredibly versatile, but to your original point, I think rhodium will be a bit more flexible matching with clothes as it truly goes with everything.

I do want to compliment your choice of bezel/bracelet configuration. I think Jubilee/Smooth is the best combination of them all.

I had a blue fluted 41 and a blue smooth but smaller size to compare, just wasn’t 100% on it but loved the black.

I have a blue Breitling Super Avenger so that will do for now as far as blue goes, I will probably swap my datejust for a blue one when they offer me the new Sub or hopefully if I’m in a position to do so I’ll keep my black DJ and get the blue as well.
