Depends on tons of variables like what type of watch and wrist size etc....

But to answer for me I’d say JLC Master Ultra Thin Moon Phase with white dial.

Also that new white explorer would be a second choice. They really nailed it this time. The balance and design just work.

I am (sort of) in the same situation as the OP. 50th b-day and 25th anniversary for me. I want something classic, but slightly more on the dressy side.

I am considering Rolex, and have looked and tried on many different sub models (black, blue, green) and I just cannot see where the excitement or desire for these comes from. To my mind it is the most boring, un-imaginative design ever.

Now a fine GMT or DJ41 (in this price range) is a different story....

A few years back, I bought a 1680 for about $7k. I am enjoying wearing the watch and watching the value go up. At this time, I would buy a right 16800 and hope for the best.
