If I would have to chose only one watch as my only watch forever it would be the Exp39.
If I could chose 2 they would be Exp39+DD40.

Depends if you need a true dress watch for more formal occasions. In that case, #2: Calatrava (ALS 37 and Reverso also good choices).

Explorer (36 or 39) with a polar Explorer II would be an amazingly cool combination!

Explorer is clean, more classically sized and monochromatic.

Explorer II is a big sporty watch with GMT feature and date.

Personally, I would go for a more dressy watch to complement the Explorer. Staying within the Rolex ecosystem, I’d go Datejust or - at a much higher price point - the Day Date. I have both the Rolex Explorer and a Datejust (36mm) so that was what I did.

Other options to pair with the Explorer: Cartier Santos Medium, to stay in the same price point. If you are willing to go to a higher price point like the Day Date, then I’d get a Vacheron Constantin Traditionnelle or Patrimony, an ALS Saxonia, or a Patek Calatrava.

This is if you want to go Explorer/Dress watch. If you’re going sports/sports, then can’t go wrong with any of the other Rolex sports models (GMT, Sub, Daytona, etc) - they are tops in their sectors. Good luck and have fun!
