In the movies? A Submariner as that's what he wore back in the day.

If he were a real person today, I would say a GMT for the functionality or a SD4K 40mm as it tough as nails.

I doubt very much he would have a Rolex at all...unless he bought it for himself. Just cannot see Mi6 handing out Rolex Submariner's DD's or and GMT's to employees in these days of austerity and brexit..

Didn't he wear a GMT in one of the older movies? There was a scene in one of the movies where he was tied up about to drop into something horrible or be chopped up and he used the bezel rotating like a miniature saw to cut through the rope. My fuzzy memory recalls that may have been a GMT. Anyways, Sub or GMT would be my guess.

That was live and let die and was a submariner. The only GMT was worn in goldfinger by pussy galore, it was a 6542.

Sub. In the books it's likely he wore an explorer but we'll overlook that.

P.s. HM Govt does occasionally sell off watches purchased to be worn by military personnel when in formal functions where they need to be inconspicuous.
