An Explorer, as was originally intended.

I don't know much about James Bond, but fake movie superspy-assassins in general can do simple arithmetic and never worry about feeding parking meters or burning their own pizzas, so a dive watch is unnecessary.

If you were a producer or director, today, and the wardrobe department hands you a bunch of watches including Rolex to choose from, modern ones, what would you choose? Use case, Bond is sexy, charming, looks great without a top on, loves the beach, girls, wears a tux time-to-time... would you really choose an Explorer?

Yes, of course an Explorer. Aesthetically versatile/doesn't look cheesy with a tux, no bezel to be broken/stuck due to explosive concussion/beach sand grit, and a watch doesn't bestow any more sexiness, charm, fitness, or love for the opposite sex on the wearer he/she doesn't already possess. It's a watch, and for a fake movie superspy-assassin, that means it's just another piece of government-issue equipment, disposed-of if necessary and replaced.

Not one of you has a clue what 007 would wear now a days because none of you ever knew him. I doubt if any of you have read one of Fleming's books from cover to cover and the films were nothing like the books.

There is only one person who could answer this question and that is Ian Fleming. I live near where he lived and I know quite a few people who knew him. He was a miserable and grumpy old bugger and he would think that the question was utterly stupid and would tell you to go to hell rather than answer it.
