We use staub cast iron. Takes more work and requires more fats to cook but worthy tradeoff imho. I like grape seed oil for seasoning. Holds up well.

what about washing CI I was always told just to wipe it out (within reason of course) no dishwasher and very little soap if necessary.

I just use coarse salt with a little oil and scrub. That usually works well. I also have a silicone rubber sponge wrapped in chainmail that works good too. It was around $10 on amazon.

That's probably because theirs is enameled cast iron, not just cast iron.

I've got a wok - carbon steel from an oriental supermarket - it's was one of the expensive ones at £14...
Cast iron takes so long to heat up, so I don't bother with it now. Everything from omelettes to stir fry veg and steaks.

Although in her case it was more the fumes than the heat.

I’ll bet that your wife won’t want to keep up with traditional cast iron. Look at le creuset. Use silicon(or any non metal) utensils and it will outlast her and your kids. The enamel is non stick with enough fat (ie butter, oil, etc)

BINGO! Just got it today. We decided to try the coated cast iron. If she doesn't like it (she better), we'll try All Clad and give this one away.

Enjoy! We've had ours for almost 10 years now. It still undergoes a bit of seasoning and when you clean it, don't use anything more abrasive than the rough side of a sponge. As long as there's some oil or fat for each cook, it releases really well. This German pankcake just slid right off the pan.

It’s generally cheaper at he outlet, but they may not have the same options. I’ve been very satisfied with what I bought there. They are not seconds, or defects.

If seasoned, you can use hot water and a scrub brush. No soap though, and certainly no dishwasher. After drying with a towel I put back on the stove for a minute to fully dry and will then turn off the heat and wipe the tiniest bit of oil all over the interior of the pan.

When I got my Lodge pan 14 years ago, I would only use kosher salt to clean like Alton Brown instructed. I found that it wouldn’t always fully remove all the debris, and the pan became a chore to use. I very quickly moved to hot water and a scrub brush and my pan has never been better. The old Lodge rough finish has completely gone away and it’s now very smooth and nonstick.

Thanks. The internet says there’s an outlet store near my AD. I can’t remember having seen it but I’ll make the drive. Maybe I’ll pop in at the AD too. I’m not locked into any particular color so I can be flexible on some things.

I've been gone for a little bit and wanted to yet again Thank Everyone for the great information in this thread! It's so cool to have so many people who have so much great information about so many different things here on TRF!

We got our new cookware and Absolutely Love it! Man they heat up fast and cook evenly! Looking at getting a few others to add to the set.

You made a good choice. I've had my All Clad cookware for two decades, which is more than half the time I've been alive. For bare stainless, Bar Keeper's Friend makes cleaning them very easy when something gets stuck to them, and is also great at restoring the full cosmetic appearance.

I had never used a saute pan until I purchased my first set. I found myself using it so much I purchased a second one in one quart larger size.
