1999 Datejust versus 2019 Submariner

Collective think tank I would appreciate your thoughts.
I have a 1989 datejust recently serviced by a local indie with a great reputation. After it was dropped and the crystal broke it sat in a drawer with a broken crystal for 25 years. During servicing the broken crystal was replaced...the indie still has his Rolex parts account so the new crystal has the Rolex crown at 6. Back in 1989 no crystal on any model had the crown...so that is kinda cool.

Question:
When setting time/date/ or winding the serviced 1989 datejust it is supper easy/slick to turn with zero resistance...almost as if sliding on ice. Feels very very delicate. When setting the time/date or winding the 2019 submariner I feel resistance and it feels supper stout.

Why such a difference when the movements are identical?

I would have thought the feel would have been identical.
Note...i do not remember how the datejust felt 25 years ago.

How the crown feels should always reflect a state-of-wind. If their is no wind (torque) in the mainspring, it will be very easy to turn. If the mainspring is fully wound already (maximum torque) there should be a noticeable difference.

I would have thought tbe same on the tourque.
But it does wind up and will run. Also if wearing it winds and will run.
