For some reason I am less concerned about losing lume plots if the dial has white gold surrounds. For example, I have a 1988 5513 with white gold surrounds and I am far from careful when wearing it. However, I would be concerned about being rough with a 1984 model w/o the white gold surrounds.

I would like to purchase a 1675 but admittedly the dials scare me a little. This article did not help matters much:

So, is my concern justified? Or am I being overly cautious?

The advantage of the 1675 is that matte service dials are still available AFAIK.

I've owned many vintage GMTs and Subs with matte dials and I can't say that I've had issues with any of the dials regarding flaking lume plots. Of more concern are the old, tritium hands which can easily crack or lose their lume entirely. The hand lume is easy to repair or stabilize cracking to prevent further decay.

I wouldn't worry too much about the lume, since it's just part of owning a vintage watch no matter what the brand you choose.

I've never had an issue with dial lume on a GMT-Master.
