Definitely the Ceramic Perpetual calendar, follow closely by the SS Skeleton. If I am not wrong, the entire year production quota for the former was already sold out within weeks after it has been launched in SIHH.

Other than super complicated ones, the 2 that come to mind are 15202 and openworked. This is based off online reading...
