If you were a one watch guy

So just saying if you were a one watch guy and only wanted one watch, and you had 14-15 what would you buy.

Watch has to be able to go with anything, casual and suits. Outfits would be black or blue so gotta go with both.

Honestly I'd go Datejust 36mm, oyster bracelet, smooth bezel. Pocket the difference.

Sorry, I thought you meant if you had 14-15 Rolex watches and were looking to consolidate to 1...

SS blue dial DJ41, fluted bezel on an oyster bracelet. Will give it that sporty look but you can also dress it up.

This is exactly the reason I got myself a DJ41.

DJ41 smooth bezel with oyster bracelet and black dial. Can be sporty, causal or dressy and is appropriate for business attire. The black dial will go with all colors. Can not go wrong. With the updated movement, same as in the Submariner, it is robust enough for all activities.
