OP 39 is a nearly perfect watch if you can live without the date function. For me, I do not love the DJ with black dial and polished bits.

Explorer out of those three choices.

But I would lean towards DJ41 (which is more like 39mm) non-fluted, on oyster bracelet for $7350 since that has the date function.

If by "one and only" you mean you're going to wear this every day at every occasion and while on vacation, at the beach or skiing, then I'd say the Explorer 100%. I really like all three of these watches, so I don't think you could go wrong either way. Some will say go with the one that "speaks to you", which is sound advice. But I find that what I think of a watch before I buy it vs after I buy it changes somewhat. I always loved the Explorer since way back in the 80's and finally had the chance to buy one. But as I got more serious about the purchase the watch that "spoke to me" was the Explorer II with its date, black dial, and 24hr hand. It was a tough decision but I ended up with the Explorer because of the long love affair, but it didn't speak to me, at least not at first. 3 months down the road now and I absolutely love the watch. I love the simplicity, the way it sits on my wrist, and the statement it doesn't make, and the lume. I look at an Explorer II now and have no desire for it. It doesn't speak to me at all and I'm glad I didn't go that way.

Explorer, prefer the mercedes hands over the OP and the DJ is too small IMO. Plus the DJ has polished parts.

Out of the three, explorer. I would personally look at Datejust 36/41with fluted bezel for the one and only watch.

Datejust pretty easily.

1. It has a date function
2. The dial is the most attractive of the three
3. I really dislike Arabic numerals on watches so the Explorer would be out for me
