We go back and forth between ribeye and tenderloin. Both are great cuts and I’d say we’re close to 50/50 on what we buy.

Had a wonderful Piedmontese filet in Vegas a couple of weeks ago. Piedmontese is the Italian Wagyu. Genetic anomaly like Wagyu but instead of increased fat, it expresses as double muscling. It’s leaner but also more tender.

Eddie V's never disappoints.
The horseradish Parm crust on my filet combined with a classic bearnaise sauce put the steak over the top. Hoping this one counts as her Valentine's Day Dinner, didn't tell her yet, will be sure to let you know how it works out for me.

NE clam chowder, I had the clams with linguine and my wife had their Chicken Parmesan..washed down with a couple of margaritas.
