Is it easier to resell a Rolex date (any model) compared to the non date ones ?

In my modest opinión it is...

The exception would be the no date Sub, those resell at a premium

Probably, but only because there are probably more buyers looking for models with a date. Though there are folk (myself among them) who prefer the symmetry of a face with no date or cyclops.

Daytona does not have a date, so the answer is no.

I agree. If the market is the broader public (i.e., eBay), then a watch with a date display will have broader appeal; if the market is the watch-enthusiast community (i.e., TRF), then there are plenty of buyers for time-only watches.

Well the Daytona Date is very hard to sell.

People keep saying it isn’t authentic

No need for modesty here! Your certainly entitled to your opinion and, really, that’s the only one that matters. Buy what you love.

Being a no date sub owner, I’ve followed secondary prices closely since considering trading for the submariner date. I would argue that the date version is an easier resell.

Either way, you are not sitting on a goldmine, so buy the one you like the most.
