Vintage Crazy.

Would you guys trade a 2007 116520 Rolex Daytona for a 1680 Rolex Red Submariner with Meters first dial?

If the MF Red Sub is completely original (not counting the bracelet) and has eye appeal, then absolutely! I'd jump all over that if it were a 1:1 or adding some cash from my end.

No question and sounds like a bargain and normally a lot of cash would also be needed.

But it all depends on the condition of the red and originality since this can make a huge difference especially if Rolex have had their hands on it for servicing, since many original elements, dial, hands, bezel, crown etc (which are the valuable bits) may have been changed. So care needed and you should post pics to get some feedback first.

Unfortunately, it's not possible to give this sort of advice without good pics as "the devil is all in the detail....."
