at what point / year did the Anchor's get included with Red Subs ?

Anchors were included with the first 1680 Submariners
The anchor bit actually preceded the 1680 Submariner as they were first seen with the 6536 and 5508 in a 100/330 versions. They then were included in sets for the 5510, 5512, 5513, and eventually the 1680 as 200/660 versions.

I've often wondered if the Red Subs had a different anchor (e.g. copper that I've occasionally seen online) than non-red 1680s?

So a 73' Mk4 Red wouldn't have come with anchor then ?

It would have come with the watch, unless someone removed it from the box. it was an accessory for the 1680's.
