I promise that you can't go wrong with a 1016, Adam. And since you live in arguably the best source for vintage Rolex, you should be able to find a nice one.

Honestly, I think the 1016 is a little overpriced these days. You're looking at around 7k for a decent example, if you're lucky, and for that kind of money there's a lot of tempting choices around....1680, 16750, etc.
