What's Your Ribs Mop Sauce Recipe?

Making some ribs today and am curious what's your fave mop sauce?

I do mine on a Big Green Egg so I don’t mop but I do like Stubbs BBQ sauce when I finish some wet ribs.

What's Your Ribs Mop Sauce Recipe?

Mopping ribs is a bit unusual for me.

A lot depends on how you are cooking - direct charcoal grilling, indirect slow roasting with charcoal, cool smoking with pellets, smoking with chunks and charcoal, gas grill direct, gas grill indirect, gas grill with smoking chips in a metal tray, ceramic cooker (green egg)…

I would only mop if it was direct charcoal. And then only if the ribs were brined beforehand. Under those conditions, I’d choose mojo (your choice of brand). I like Badia or La Lechonera.

But my best rib results come without brining or mopping using a charcoal snake method with a dry rub and ribs trussed in a ring.

Whatever the dude in Washington park uses for his ribs is good enough for me. Add his mustard sauce and they’re perfect.

I don't mop my ribs but serve with "Bone Suckin' Sause" on the side.

I use their rub also! I usually smoke for 3 hours then wrap (or place in alum pan) after adding a little butter, honey and brown sugar for another 2 hours.

The snake method looks interesting....!?

That’s delicious Americana but not a mop sauce haha

I don’t mop ribs. I generally just dry rub with mustard binder and smoke em 4-5 hours at 225 until bend test says they’re done. Sometimes 321 in which case butter, brown sugar and whatever fruit juice is on hand hits the wrap for part 2.

When I think mop sauce I think whole hog or pork butt.
