There’s no official definition for over polished. Personally, I would say it’s fine. I’ve seen watches much much much more polished.
The first thing I look for, is the crown on the clasp. Here is still pretty clear. I’ve seen them be completely polished off.

Crown on the clasp still looks good, I've seen much worse.

Precisely

Then again, we don't know what kind of life the watch has had either. But that watch looks like it has had a very full life.
Overpolishing is a subjective term.
If a watch has had a hard life and a number of hard polishes to clean it up sufficiently then those lugs will definately get thinned down.
At the other end of the spectrum.
Now going by the pics of the OPs watch and assuming the watch was in extremely great shape and that was what it was like after it came back from it's first service.
Then that was a real dead set hack job in comparison to being "over polished".

I would say the watch wasn't exactly a safe queen throughout its life, but from the pics and factoring in its age, one could assume the watch has had a full life if the polishing was possibly sympathetic and if it's potentially had maybe 3 services in accordance with the Rolex guidelines of the day.
It's subjective unless the watch was held out there to have been a safe queen. IMO.

My flat 4 from back in the day would have been virtually considered as new when I sold it in comparison. But I didn't wear it very much at all and moved it on within about 18 months

Polished yeah, but I think it looks nice. I like the smoother lines. Almost like Daytona feeling or ym.

Yours looks fine. The lines are still sharp. The brushing / finishing looks good. Chamfers are present and the lugs and crown guards are not ground down smooth. The crown on the clasp is a little dulled, but that's going to be expected with a polish. A polish isn't the end of the world, IMHO. It's a natural part of the life cycle of a watch. You wear it, it gets scratched up, after several years you want it cleaned up a bit. A good polish job will look polished but not absurdly so.

This to me is over-polished, but not absurdly over-polished like thesharkfactor's post above, where that watch was just abused:

https://imgur.com/a/kBzkNj2

This was offered to me in a trade, and as much as I lust after a GMT Master II in Pepsi colors, I had to decline. You can see the lugs and crown guards are rounded (again, not to the extent of that poor two-tone above), the finishing isn't great, and overall it just doesn't look nearly as sharp as it should.

Your watch looks fine. I would be pleased with such an example. By no means is it over polished.

Not by a long shot regardless of picture quality. Be careful with getting too critical of that kind of stuff by reading the forums. It’s not even close to over-polished.

The lugs are thin and not symmetrical?

What do you think?

The second set of photos show how sharp it is really. Not bad at all. It’s been lightly polished but it’s pretty darn good. As far as the lug question, the crown side lugs are thinner from the factory. It’s not symmetrical on most Rolex models.

The first set of photos were a bit overexposed and misleading. We couldn’t see detail. I’m sure some folks will change their view now. It’s a good one.

not at all. The lugs are completely flat and have a very nice small chamfer. I have a 5 digit LV and have researched these watches a lot. It is too clean to be unpolished unless it was a safe queen. You may have gotten lucky. I don't see the crown polished as it may be artifact from a poor picture.

Thanks for the better pics
Overall the watch looks quite nice and I'd be content with it's condition. It looks a lot better than in the first set of pics.
Enjoy
